Today was my last full day of work today after 2 years and 8 months. Weird feeling. Happy and sad. Terrible terrible traffic today, so good riddance to that. And except for finishing up a couple small projects from home over the summer, I've got the summer off.
I made a strawberry pie for everyone. While generous and all, I was feeling a little defeated. I had to use up all my good strawberries on a pie because there was no pectin to be found to make strawberry freezer jam. That's what I was really craving. I tried 2 conventional grocery stores, a specialty grocer called the Fruit Market (ha), and a health food store. I was handed Apple Fiber with 10% Pectin, Arrowroot Powder, and a whole lot of blank stares. Finally, I had to give up and make pie. I guess no one in these parts makes their own jam. Why make your own jam with local strawberries when European jam can be imported from just across the pond, I guess.
Still, it was good to share pie with co-workers who overall have been very good to me. It will be better to bake a pie for my family when I go home tomorrow morning for a three week vacation. So yes, mother-in-law of mine, I would be very pleased to whip up any strawberry and/or cherry recipe you desire. Can't wait. I'm sure we can find some nice strawberries and cherries in Michigan.
